Chef Klemens Gold is the creative mind behind RAU, nature-based cuisine restaurant. Awarded a Michelin Star and a Green Star, his cooking is all about sustainability, seasonality, and the wild beauty of the Kalkalpen National Park. From foraged ingredients to homegrown produce and handmade ferments, every menu at RAU reflects the rhythm of nature. Once a Michelin-starred chef in Zermatt, Klemens returned home in 2018 to redefine Alpine gastronomy. Beyond the plate, he’s also pioneering Austria’s first tea garden and created Combuchont, his own fermented tea-based drink.
