Chef Nicolas Durif’s passion for cuisine was first kindled in his grandmother’s kitchen. Those early days, filled with thearomas of traditional dishes and the joy of shared cooking, set him on a path toward culinary excellence.

He later refined his skills in esteemed establishments, including the restaurant of the 4-star Mercure Rochefort La Corderie Royale. Awarded his first Michelin star in 2018, Chef Durif now leads an exceptional brigade, serving modern French cuisine that is a refined blend of seafood, locally sourced ingredients, spices, and herbs, including his signature touch: hyssop, the aromatic plant that inspired the restaurant’s name.

Rooted in tradition yet quietly inventive, Chef Durif’s cuisine speaks with elegance and restraint, earning him growing recognition across Europe for a style that feels both timeless and entirely his own.
